Inspired by http://themovementmenu.com/recipes/fried-cauliflower-rice/ and http://bestrecipebox.com/recipes/cauliflower-fried-rice/ This makes a TON of food. Feel free to halve this (1 bag of cauliflower and 1 pound of beef). INGREDIENTS - 2 bags Trader Joe's Riced Cauliflower
- 2 pounds ground beef
- Coconut oil
- 1 to 2 large yellow onion diced
- 1 bag green onions (scallions)
- 6-8 cloves garlic
- 1 bag frozen mixed veggies (microwavable)
- 1 teaspoon dried shallots or onion powder
- 1/2 teaspoon ground ginger
- 1 teaspoon black pepper
- 1 teaspoon sea salt
- 1 tablespoon apple cider vinegar
- 2 tablespoons soy sauce
INSTRUCTIONS - In a separate pan/pot, brown the ground beef.
- Cook the frozen veggies and leave in bag for right now.
- Heat a large saute pan on medium-high heat and melt 2 tablespoons of coconut oil in the pan.
- Add diced onions and cook until translucent. Add garlic cloves and cook for another 30 seconds- until fragrant.
- Add in bags of riced cauliflower. Carefully break down the cauliflower with a wooden spoon or spatula. Cook the cauliflower until it looks soft and tender. This can take anywhere between 5-7 minutes.
- Add in the spices until well combined. Stir in additional coconut oil, apple cider vinegar, and soy sauce. Cook on medium-high heat until the cauliflower rice reaches your desired doneness (another 5 - 10 minutes?)
- Stir in the ground beef, mixed veggies, and scallions.
- Serve.
