Beef Fried Cauliflower "Rice"

This makes a TON of food.  Feel free to halve this (1 bag of cauliflower and 1 pound of beef).
 
INGREDIENTS
  • 2 bags Trader Joe's Riced Cauliflower
  • 2 pounds ground beef
  • Coconut oil
  • 1 to 2 large yellow onion diced
  • 1 bag green onions (scallions)
  • 6-8 cloves garlic
  • 1 bag frozen mixed veggies (microwavable)
  • 1 teaspoon dried shallots or onion powder
  • 1/2 teaspoon ground ginger
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons soy sauce

INSTRUCTIONS
  • In a separate pan/pot, brown the ground beef.
  • Cook the frozen veggies and leave in bag for right now.
  • Heat a large saute pan on medium-high heat and melt 2 tablespoons of coconut oil in the pan.
  • Add diced onions and cook until translucent. Add garlic cloves and cook for another 30 seconds- until fragrant.
  • Add in bags of riced cauliflower. Carefully break down the cauliflower with a wooden spoon or spatula. Cook the cauliflower until it looks soft and tender. This can take anywhere between 5-7 minutes.
  • Add in the spices until well combined. Stir in additional coconut oil, apple cider vinegar, and soy sauce. Cook on medium-high heat until the cauliflower rice reaches your desired doneness (another 5 - 10 minutes?)
  • Stir in the ground beef, mixed veggies, and scallions. 
  • Serve.
