Poppyseed Chicken Casserole


  • 1 to 1/2 lbs chicken breast (I used 4 good sized breasts)
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 2 Tbsp Poppyseeds
  • 1 tube Ritz crackers
  • 1 stick butter


  1. Preheat oven to 350
  2. Boil water.  Add chicken breasts and boil until cooked thoroughly (no pink).
  3. In large bowl, mix soup, sour cream and poppyseeds
  4. Crush crackers
  5. Melt butter
  6. Mix crackers and butter
  7. Remove chicken from water and cut into bite sized pieces.
  8. Stir chicken into soup mix
  9. In a casserole dish, spread half of the chicken mix on the bottom of the pan
  10. Then spread half the cracker mix over the chicken
  11. Repeat with the remaining chicken, then crackers.
  12. Bake, uncovered for 20-30 minutes (to get it bubbly on the edges and start to crisp the crackers on top)
  13. Serve over rice.
