Ingredients
- 1 to 1/2 lbs chicken breast (I used 4 good sized breasts)
- 1 can cream of chicken soup
- 1 cup sour cream
- 2 Tbsp Poppyseeds
- 1 tube Ritz crackers
- 1 stick butter
Directions
- Preheat oven to 350
- Boil water. Add chicken breasts and boil until cooked thoroughly (no pink).
- In large bowl, mix soup, sour cream and poppyseeds
- Crush crackers
- Melt butter
- Mix crackers and butter
- Remove chicken from water and cut into bite sized pieces.
- Stir chicken into soup mix
- In a casserole dish, spread half of the chicken mix on the bottom of the pan
- Then spread half the cracker mix over the chicken
- Repeat with the remaining chicken, then crackers.
- Bake, uncovered for 20-30 minutes (to get it bubbly on the edges and start to crisp the crackers on top)
- Serve over rice.
